Elsa’s Braid & Frozen Snowflake Cookies – New ZP Cookie Molds!

New Christmas Cookie Molds from ZANDA PANDA

New Christmas Cookie Molds from ZANDA PANDA

New designs for the winter holidays!

From top left:  Snowman,  Present,  Frozen Snowflake,  Elsa Cookie (Frozen Snowflake surrounded by braid border),  Cute Reindeer.

Bored with your same old Christmas cookie cutters?  Need something tasty for a Frozen party?  Looking for a stocking stuffer for your favorite baker?  Gotcha covered 🙂

Four of the designs above double as ornaments when hung by their red satin cords.  The cords can easily be removed when making cookies or creating holiday crafts.

These handcrafted cookie molds can be used for molding cookie dough, fondant, pound cake and slices of bread for tea sandwiches.  The molds can also be used for making crafts like cast paper for scrapbooking, salt dough and polymer clay for sculpture or to create holiday ornaments.

Each mold is individually handmade in my studio in Connecticut from my original sculpture. The clay molds are then high fired twice to create food-safe, dishwasher safe, stoneware molds that will last for generations.  Directions and a recipe for molded cookies are included.

Have a wonderful holiday!

Make these adorably goofy Bat, Cat and Witch cookies for your Halloween party or to delight your favorite Trick-or-Treaters.

Watch the video to see how easy it is or visit the ZP website for more info.  You can also download a PDF with instructions and the recipe for Pumpkin Spice Cookies with Cream Cheese Cookie Dip.

A few things to remember:

•  Always use a cookie dough recipe that was designed for molded cookies, or they might flatten out in the oven when baked and will lose the designs.  You can find recipes on the ZP website and at Anne L. Watson’s Molded Cookie site.

 •  Oil your mold very sparingly, too much oil may encourage the dough to stick.  You’ll want a very soft sheen on the face of the mold.  If it’s shiny, wipe away the excess oil with a lint free towel.  You only need to oil your mold once – not before each cookie.

 •  Thoroughly dust your dough with flour – But be sure that it looks ‘frosted’ – not heavily floured.

YES!  Although we are no longer taking reservations, you can still receive a

This recipe makes a soft, cake-like cookie. I developed this recipe using Anne L. Watson’s book ‘Baking with Cookie Molds’. She gives the basic framework to develop your own recipes for molded cookies. It’s a very informative book and I highly recommend it.

Pumpkin Spice Cookies

1 cup butter
1 egg
½ cup molasses
¼ cup dark brown sugar
½ cup canned pumpkin
2 tsp vanilla

½ cup sugar
¼ tsp salt
4 cups flour (plus additional)
2 tsp cinnamon
½ tsp cardamom
½ tsp allspice
½ tsp ginger
½ tsp clove
¼ tsp nutmeg

Melt butter in microwave for one minute intervals at half power. Add molasses, brown sugar, pumpkin and vanilla. Beat egg in a separate bowl, then blend into the above ingredients.

In a separate, larger bowl, whisk together sugar, salt, flour and spices. Add the wet ingredients and blend.

Add additional flour until you have a smooth, workable dough (amount depends on moisture content of your pumpkin). It will be soft and feel a bit sticky. Chill dough for about ½ hour before molding cookies.

If your cookies are thick, heat oven to 350° F (177° C) and drop to 300° F (149° C) after putting them into the oven. Bake for 15 to 20 minutes, or until edges are starting to brown.

If your cookies are thin, bake at 350° F (177° C) for 10 to 15 minutes or until edges have browned.

Cream Cheese Cookie Dip

1 heaping Tbsp cream cheese
1 cup confectioner’s sugar
2 tsp vanilla
3-4 tsp milk or cream

Blend cream cheese, sugar and vanilla. Add milk or cream a teaspoon at a time until smooth and creamy. Put in small individual bowls for dipping the cookies.

Cinco de Mayo Recipe: Mexican Butterfly Pizza

Mexican Butterfly Pizza with a Sculptured Cheese Top*

Mexican Pizza with Sculptured Butterfly Cheese Top

Mexican Pizza with Sculptured Butterfly Cheese Top

Here’s an idea for an easy dish to celebrate Cinco de Mayo.  This is a fast, fun recipe that’s great to make with kids.

Mexican Pizza IngredientsMexican Pizza Ingredients

One Mexican pizza will make an entree for two, a side for eight, or appetizers for twelve to fifteen.

You’ll need:

  • 1/2 lb  shredded cheddar cheese
  • 1 lb  ground beef
  • 16 oz jar of salsa
  • Packet of taco seasoning mix (optional)
  • 4 tortillas
  • ZANDA PANDA’s Kaleidoscope Butterfly Mold

The seasoning packet is optional.  I only used about a tablespoon of it, sprinkled on the beef when cooking.  Next time, I think that  I’ll just mix the beef and salsa together .

Constructing the pizza

Tortillas, Ground Beef, Salsa and Cheese

1.  I used whole wheat tortillas, you can also use corn or white flour tortillas.  Place four overlapping tortillas on the serving plate.

2.  Place the seasoned, cooked beef on the four overlapping tortillas.

3.  Add salsa on top of the ground meat.  You can also add a layer of cream cheese, guacamole, or salsa verde.

4.  Press the shredded cheese into the Kaleidoscope Butterfly mold.  This is great for kids to help with, as this job has ‘squish appeal’.  Place the cheese-filled mold into a 350°F  (177 °C) oven for a few minutes, watching carefully, as it melts fairly quickly.  Remove from oven  and allow to cool a bit and solidify. Caution: mold and cheese will be very hot .

Top off with the Butterfly cheese top.  It will still hold it’s shape if you re-warm it.
Tip: Dab with a paper towel to remove excess oil from the melted cheese before placing it on the pizza.

So there you have it.  Cute, fast and fun.

*What do butterflies have to do with Cinco de Mayo, you ask?  Why we’re also celebrating the return of the monarch butterflies from Mexico!  Yes, I know that this stylized swallowtail isn’t quite a mariposa monarca (it’s Mexican name), but this is a pretty ‘cheesy’ way to celebrate after all…

New Technique! Marbled Cameo for the Kaleidoscope Butterfly Cake Topper

I’m so proud of myself!

I’ve just thought up a ridiculously quick and simple way to make absolutely gorgeous cake toppers using two colors of chocolate.

Two-Tone 'Cameo' Kaleidoscope Butterfly Cake Topper

So all I did was take melted Ghirardelli molding chocolate, put it on the surface of a Kaleidoscope Butterfly Mold, pull a flexible silicone spatula across it, let it cool, then add white chocolate on top of it!  That’s IT!!!

Ghirardelli Dark Dipping Chocolate

Ghirardelli White Dipping Chocolate

I wasn’t even very careful about it, and where I ‘missed’, it created a very pretty marbled effect!

If it started to solidify,  I’d just pop it into the microwave for a few seconds.

I am going to have so much fun with this technique!

I can’t wait to try to using tinted white chocolate in pink and red for Valentine’s Day – A Kaleidoscope Heart, No-Bake Backwards Cake with all the elements in a contrasting color, not just the hearts!

You could probably get a very pretty ‘stained glass’ look rather easily by using several colors.

You can also use regular chocolate, but be sure to temper it, so that it will solidify properly without graininess:

Quick-Tempered Chocolate

Finely chop chocolate or use chocolate chips. Melt two thirds of the chocolate in the microwave for thiry second intervals, stirring in between with a silicone spatula (don’t use wood, it can introduce moisture and cause your chocolate to ‘seize’).  Keep the temperature below 120F.   When chocolate has melted, add the remaining one third in three batches, stirring until smooth after each addition.

Using a pastry brush, paint the melted chocolate into your mold.  Be sure to brush into the crevices, brushing out any trapped air bubbles.

I’m back from QVC training.  The Kaleidoscope Heart and Butterfly Molds will be featured there soon.  I’ll post the date when it’s finalized.

So I finally had time to have some fun with the prototype Puppy Mold.  Here are cake, cookie and chocolate puppies of various breeds.

Video: How to Bake Two-Tone and Mini Sandwich Cookies

There’s an informal video on the Zanda Panda website to you to show you how to make two-tone cookies and adorable mini sandwich cookies in heart and butterfly shapes using your Zanda Panda Kaleidoscope molds.  You can make ice cream sandwiches with the two-tone cookies by filling with your favorite ice cream, frozen yogurt or sorbet.
Fill sandwich cookies with your favorite icing or melted chocolate.  Use gel food coloring to get the really bright colors.  They’re really fun to make!
